The wedding cake is getting ever more creative, says Suzanne Thorp of artisan cakemaker The Frostery. With couples daring to be bold and do different, she outlines five key trends to look out for in 2019

Wedding cake has evolved considerably over the years. Gone are the days when the only choice was fruit cake and white icing. Nowadays, couples are not only choosing a wedding cake in indulgent flavours but also opting for designs that are complete works of art – from delicately piped multicoloured flowers, to multiple extraordinary layers.

There are endless possibilities when it comes to choosing a wedding cake. It’s a fantastic, fun way for couples to get creative and choose something unique to them while captivating and indulging their guests.

This year we saw several new techniques and twists – including geometrics and woodland-inspired designs – and 2019 is likely to be no different, with several unusual wedding cake themes set to rise in popularity. Here are five key trends to keep an eye out for in the season to come…

1. Brilliantly bespoke

What’s clear is that couples are becoming much more adventurous when it comes to planning their wedding – and that includes the design of their wedding cake. When couples realise the creative potential to be different with their design and flavours, many will find themselves selecting something that’s beautifully bespoke and unique to them and their day.

2. Monograms & motifs

In the year ahead we will see a rise in the number of couples requesting monograms piped onto their cakes. Monograms add an air of grandeur to the design while also bringing a delicate and subtle personal touch. Bespoke hand-painted motifs will also continue to be popular.

3. More metallics

 Metallics have been increasing in popularity over the course of 2018 and I think that this popularity will continue. But while gold and rose gold have dominated this year, 2019 will see them make way for silver and more muted metallic elements.

4. Bolder textures

Perfectly smooth iced tiers have been the finish of choice over the decades, but more recently couples have been open to incorporating different textures into their cake design. In 2019, we can expect to see a rise in the number of couples choosing to create a cake with a textured surface rather than opting for the more familiar smooth layers.

5. Lavish detail

 With texture coming to the fore as a big trend for 2019, this will encourage couples to become more focused on the finer details of their design. For those who want a textured cake, there are endless possibilities. Delicately piped royal icing is something in particular that I think will excite couples when it comes to considering the details. The ability and skill of cake designers to layer up these details means the cake can become a masterpiece that stands out from the crowd.
