Q: We’re looking for a really unusual wedding cake – not just the typical sponge or fruit cake. What ideas can you recommend?
A: Here at Let it be Cake we are constantly adding new flavours to our menu because so many couples like the idea of serving their guests unusual, luxurious combinations that are not available every day.
For example, cherry and almond cake is normally a tart but we have made it into a cake form, including all the key ingredients that would create a bakewell tart. For the ultimate luxurious wedding cake, we would definitely recommend our champagne sponge. It is made with real champagne, and soaked with champagne again when it comes out of the oven to bring out its delicious and luxurious flavour.
It’s worth knowing that cake flavours can always be made into gluten-free options – a request that is more and more frequent among couples. For example, we have adapted our menu favourites to cater for people’s tastes and any allergies.
Another avenue to explore is lighter options to traditional cakes. For instance, our almond, orange and yoghurt flavour is light and fluffy and a great choice for a high-summer wedding when couples often want a less rich flavour than, say, chocolate. This recipe can also be adapted to remove the nuts.
While the taste of your cake is all important, it also has to look wonderful and I find it’s very useful for couples who are stuck for ideas to meet with me so I can get a feel for the wedding and their vision for the cake and then design something totally bespoke to match the occasion.
